kitchen creations: an impromtu date night+grilled zucchini pizza

Oh date nights. They kind of complete me. Like Jerry Maguire complete me. Especially since it means that I turn off all things technology and say au revior to my "to do" lists for a little while and spend some quality time with my very handsome hubby. This was such a thing this past Sunday. As we drove home from volunteering that afternoon, the question of what is for dinner came up. Right then and there, we both looked at one another and came up with the same brilliant idea: date night! Our date nights range from going bowling, catching a movie accompanied with buttered popcorn (of course!!!), roller-skating (true story), picnicking in our favorite parks, grabbing some frozen custard, redbox movie nights and trying new restaurants. But, then there are those date nights where we want to be at home and cooking. Together. You know, creating deliciousness in the kitchen. And, that is exactly what we did for our impromptu date night on Sunday, which brings me to another kitchen creation. The best part...it is GLUTEN-FREE!!! (Sense the excitement, friends!)

Introducing Grilled Zucchini Pizza Slices by Kalyn. Woman is a genius. Genius!

Not only is this recipe SUPER easy to make, but it is pretty healthy and filling on its own.

Ingredients:
1-2 balls of zucchini or 3-4 zucchinis found in any grocery store
Mozzarella cheese or a fresh ball of mozzarella (this is my modification, but trust me when I say...it is worth it!)
Pizza sauce or organic pizza sauce (another modification, but a VERY healthy spin)
Any toppings you would want to include
Red pepper flakes (optional...B man does not care for these)
Oregano (optional)

Directions:
1. Cut up the zucchini slices 3/4 inch thick
2. Heat up grill pan and put a bit of olive oil in pan
3. Grill the zucchini slices to get those gorgeous grill marks
4. Preheat oven to 350 degrees and place foil on cookie sheet to bake the zucchini slices.
5. Shred up the fresh mozzarella ball or get the shredded cheese ready
6. Pour pizza sauce on the grilled slices of zucchini
7. Place toppings of your choice
8. Top the zucchini slices with mozzarella cheese
9. Place any seasonings on top (red pepper flakes and/or oregano)
10. Place grilled zucchini slices in the oven and make sure to turn the setting on the oven to broil
11. Cook zucchini slices for 7-8 minutes
12. Take out of oven and prepare for an explosion to occur in your mouth. (I think I was oohing and ahhing every other second for the first 10 minutes.)

Side note: orange cream soda and Ben and Jerry's Creme Brulee (I think my heart started beating twice as fast at the sound of some B&J) accompanied this meal perfectly. Just saying.
